Sugar Sandwich Cookies with Cream Cheese Frosting

Description

Delightful sugar cookies filled with tangy cream cheese frosting, perfect for any occasion.


Ingredients

  • 1 cup Unsalted Butter
  • 1 1/2 cups Sugar
  • 1 large Egg
  • 1 large Egg Yolk
  • 2 teaspoons Vanilla Extract
  • 2 1/2 cups Flour
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 3/4 teaspoon Salt
  • Sparkling Sugar (for topping)
  • 1/2 cup Butter (softened)
  • 1 (8-ounce) package Cream Cheese (softened)
  • 3 cups Powdered Sugar
  • 1 teaspoon Vanilla Bean Paste


Instructions

  1. In a large mixing bowl, cream together the unsalted butter and sugar for about 4 minutes until light and fluffy. Scrape the sides of the bowl halfway through mixing.
  2. Add the egg, egg yolk, and vanilla extract to the bowl, mixing for 1 minute until combined.
  3. Gently fold in the flour, baking powder, baking soda, and salt. Do not overmix; small lumps are okay.
  4. Wrap the dough tightly in plastic wrap and refrigerate for at least 1 hour to help keep the shape while baking.
  5. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  6. Once chilled, roll the cookie dough into small balls and place them on the baking sheet with space in between.
  7. Bake for 9-12 minutes until lightly golden at the edges but still soft in the center. Avoid overbaking for a chewy texture.
  8. Sprinkle with sparkling sugar as soon as they come out of the oven and cool completely on a wire rack.
  9. To make the frosting, beat together softened butter and cream cheese until smooth. Gradually add powdered sugar and vanilla bean paste, mixing until thick and spreadable.
  10. Once cooled, spread frosting on the flat side of one cookie and top with another to make a sandwich. Repeat with the remaining cookies.

Notes

Store in an airtight container at room temperature for up to a week. Separate layers with parchment paper if refrigerated.
