- 1 cup Unsalted Butter
- 1 1/2 cups Sugar
- 1 large Egg
- 1 large Egg Yolk
- 2 teaspoons Vanilla Extract
- 2 1/2 cups Flour
- 1 teaspoon Baking Powder
- 1/2 teaspoon Baking Soda
- 3/4 teaspoon Salt
- Sparkling Sugar (for topping)
- 1/2 cup Butter (softened)
- 1 (8-ounce) package Cream Cheese (softened)
- 3 cups Powdered Sugar
- 1 teaspoon Vanilla Bean Paste
Instructions
- In a large mixing bowl, cream together the unsalted butter and sugar for about 4 minutes until light and fluffy. Scrape the sides of the bowl halfway through mixing.
- Add the egg, egg yolk, and vanilla extract to the bowl, mixing for 1 minute until combined.
- Gently fold in the flour, baking powder, baking soda, and salt. Do not overmix; small lumps are okay.
- Wrap the dough tightly in plastic wrap and refrigerate for at least 1 hour to help keep the shape while baking.
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Once chilled, roll the cookie dough into small balls and place them on the baking sheet with space in between.
- Bake for 9-12 minutes until lightly golden at the edges but still soft in the center. Avoid overbaking for a chewy texture.
- Sprinkle with sparkling sugar as soon as they come out of the oven and cool completely on a wire rack.
- To make the frosting, beat together softened butter and cream cheese until smooth. Gradually add powdered sugar and vanilla bean paste, mixing until thick and spreadable.
- Once cooled, spread frosting on the flat side of one cookie and top with another to make a sandwich. Repeat with the remaining cookies.
Notes
Store in an airtight container at room temperature for up to a week. Separate layers with parchment paper if refrigerated.
