Description

These delightful soft pretzel bites are perfect for gatherings and movie nights. They’re easy to make and better than any store-bought version.


Ingredients

Scale
  • 1 and 1/2 cups (360ml) warm water
  • 2 and 1/4 teaspoons (7g) instant or active dry yeast
  • 1 Tablespoon brown sugar or granulated sugar
  • 1 teaspoon salt
  • 1 Tablespoon (14g) unsalted butter, melted and slightly cool
  • 3 and 3/4 – 4 cups (469-500g) all-purpose flour, plus more for hands and work surface
  • Topping: coarse salt/coarse sea salt
  • 1/2 cup (120g) baking soda
  • 9 cups (2,160ml) water
  • Spicy cheese sauce or your favorite mustard (optional for dipping)


Instructions

  1. In a large bowl, whisk together warm water, yeast, and sugar. Let it sit for 5 minutes until foamy.
  2. Add salt, melted butter, and 3 cups of flour to the mixture. Mix until combined, adding more flour if necessary.
  3. Knead the dough for 5 minutes until it is soft and slightly tacky.
  4. Cover the dough and let it rest for 10-30 minutes.
  5. Preheat the oven to 400°F (204°C) and line baking sheets with parchment paper.
  6. Cut the dough into 6 pieces, roll into 20-inch ropes, and cut into 1.5 – 2 inch pieces.
  7. In a large pot, boil 9 cups of water with 1/2 cup baking soda.
  8. Carefully boil the pretzel bites in batches for 10-15 seconds before placing them on the baking sheets and sprinkling with salt.
  9. Bake for 15 minutes or until golden brown. Serve warm.

Notes

For best results, enjoy the pretzel bites fresh. Avoid freezing as they taste better warm.
