Delicious and easy Rice Krispie Cookies that combine chewy cookies with crispy rice cereal for a delightful treat.

- 1 cup (226 g) unsalted butter, softened
- 1 cup (200 g) light brown sugar, firmly packed
- 1/2 cup (100 g) granulated sugar
- 1 large egg
- 1 egg yolk
- 1 1/2 teaspoons vanilla extract
- 2 3/4 cups (344 g) all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 2 cups (60 g) Rice Krispie cereal
- 1 1/2 cups (85 g) mini marshmallows
Instructions
- Preheat oven to 350F (175C). Line a baking sheet with parchment paper and set aside.
- In a large mixing bowl, cream together butter and sugars until light and fluffy.
- Add egg, egg yolk, and vanilla extract and mix until well-combined.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually stir dry ingredients into wet ingredients until combined.
- Add Rice Krispie cereal and mini marshmallows, and stir until evenly distributed.
- Scoop cookies by 3 tablespoon-sized amounts and roll into balls, placing them on the baking sheet 2 inches apart.
- Bake for 13-14 minutes, until the edges turn light golden brown.
- Let cool completely on the baking sheet before serving.

Store cookies in an airtight container at room temperature for up to 5 days, or freeze for up to 3 months.
