Description

Soft, chewy cookies infused with pumpkin and warm spices, perfect for fall gatherings.


Ingredients

  • 3/4 cup butter, softened
  • 1/4 cup shortening
  • 3/4 cup granulated sugar
  • 3/4 cup light brown sugar
  • 1 large egg
  • 1/2 cup pumpkin puree
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 3 teaspoons pumpkin pie spice
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar, for rolling
  • 1 tablespoon ground cinnamon, for rolling


Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking tray with parchment paper.
  2. In a large bowl, mix the softened butter and shortening until smooth.
  3. Add the granulated sugar and light brown sugar; cream together until light and fluffy.
  4. Mix in the egg, pumpkin puree, and vanilla extract until well combined.
  5. In a separate bowl, whisk together the flour, pumpkin pie spice, cream of tartar, baking soda, and salt.
  6. Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  7. Cover the dough and refrigerate for about 10 minutes.
  8. Mix the 1/4 cup sugar with the cinnamon.
  9. Roll the dough into 24 one-inch balls, then coat each in the cinnamon sugar mixture.
  10. Place them on the prepared baking sheet, spaced 2 inches apart, and flatten lightly with your palm.
  11. Bake for 8 to 10 minutes until they are set but soft.
  12. Remove from the oven and transfer to a cooling rack.
