- 1/2 cup Butter (salted)
- 1 cup Granulated Sugar
- 1 cup Brown Sugar (packed)
- 1/2 cup Milk (whole or 2% preferred)
- 1/4 cup Unsweetened Cocoa Powder
- 2 teaspoons Vanilla Extract
- 3/4 cup Creamy Peanut Butter (Jif or Skippy’s)
- 2 3/4 cups Quick Oats (up to 3 cups)
Instructions
- Gather all ingredients, measure, and set aside. Line a baking sheet or countertop with parchment paper.
- Heat a medium saucepan over low heat and add butter, granulated sugar, brown sugar, cocoa powder, and milk. Stir to melt the butter and smooth out any lumps.
- Increase the heat to medium and stir constantly until the mixture begins to bubble.
- Boil for exactly 1 minute, stirring constantly.
- Remove from heat and stir in vanilla and peanut butter until smooth.
- Mix in quick oats until fully coated.
- Quickly drop spoonfuls onto parchment paper and let them set.
- Allow cookies to sit at room temperature for 20-30 minutes or refrigerate for 15 minutes for quicker setting.
Notes
For variations, try adding chocolate chips, substituting peanut butter with almond butter, or mixing in dried fruit.
