- 1 cup Sugar
- 1 large Egg
- 1 Egg Yolk
- Lemon Zest (from 1 lemon)
- 2 Tablespoons Fresh Lemon Juice
- 1/2 teaspoon Lemon Extract
- 1 1/2 cups Flour
- 1 teaspoon Baking Powder
- 1/2 teaspoon Salt
- Yellow Food Coloring (optional)
- 1/3 cup Powdered Sugar (for rolling)
Instructions
- Preheat your oven to 350°F (180°C).
- Cream together the softened butter and sugar until light and fluffy, about 4 minutes.
- Add the egg, egg yolk, lemon zest, lemon juice, and lemon extract. Mix for 1 minute until combined.
- Fold in the flour, baking powder, and salt until no dry flour remains. Optionally add yellow food coloring.
- Chill the cookie dough in the refrigerator for 15 to 30 minutes.
- Roll the chilled dough into small balls and coat in powdered sugar.
- Place the coated cookie balls on a lined baking sheet, allowing space between them.
- Bake for 9 to 11 minutes until soft in the center.
- Let cool on the baking sheet for 5 to 10 minutes before transferring to a wire rack.
