Description

Bright and refreshing, these Lemon Crinkle Cookies are soft, chewy, and packed with a delightful lemon flavor, making them perfect for any occasion.


Ingredients

  • 1/2 cup Butter (softened)
  • 1 cup Sugar
  • 1 large Egg
  • 1 Egg Yolk
  • Lemon Zest (from 1 lemon)
  • 2 Tablespoons Fresh Lemon Juice
  • 1/2 teaspoon Lemon Extract
  • 1 1/2 cups Flour
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • Yellow Food Coloring (optional)
  • 1/3 cup Powdered Sugar (for rolling)


Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Cream together the softened butter and sugar until light and fluffy, about 4 minutes.
  3. Add the egg, egg yolk, lemon zest, lemon juice, and lemon extract. Mix for 1 minute until combined.
  4. Fold in the flour, baking powder, and salt until no dry flour remains. Optionally add yellow food coloring.
  5. Chill the cookie dough in the refrigerator for 15 to 30 minutes.
  6. Roll the chilled dough into small balls and coat in powdered sugar.
  7. Place the coated cookie balls on a lined baking sheet, allowing space between them.
  8. Bake for 9 to 11 minutes until soft in the center.
  9. Let cool on the baking sheet for 5 to 10 minutes before transferring to a wire rack.

Store cookies in an airtight container for up to 5 days at room temperature. Freeze for up to 3 months in a freezer-safe container.
