- 3 large egg yolks
- 3/4 cup evaporated milk
- 6 tablespoons unsalted butter, cut into 6 pieces
- 1/2 cup light brown sugar, firmly packed
- 1/4 cup granulated sugar
- 1/4 teaspoon table salt

- 3/4 cup toasted pecans, chopped
- 1 1/2 cups sweetened shredded coconut
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 3/4 cup light brown sugar, firmly packed
- 1/2 cup natural cocoa powder
- 1 large egg
- 1 egg yolk
- 1 teaspoon vanilla extract
- 2 1/2 cups cake flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 3/4 teaspoon table salt
Instructions
- Prepare the topping by whisking the egg yolks and evaporated milk together, then heating with butter, sugars, and salt until thickened.
- Stir in vanilla, pecans, and coconut, and let cool.
- For the cookies, preheat the oven to 350F (175C) and cream together butter and sugars.
- Mix in cocoa powder, then eggs and vanilla.
- Combine dry ingredients in a separate bowl and mix into wet ingredients.
- Scoop dough onto baking sheets and bake for 8-9 minutes.
- Flatten slightly after baking and cool before topping with the prepared mixture.
Notes
Make sure your butter is softened to room temperature. Don’t overmix the dough, and remember the cookies will continue to bake slightly after taking them out of the oven.
