Description

Ingredients

  • 1 1/2 cups Sugar
  • 1 large Egg
  • 1 large Egg Yolk
  • 2 teaspoons Vanilla Extract
  • 2 1/2 cups Flour
  • 1 teaspoon Baking Powder

  • 3/4 teaspoon Salt
  • 4 Tablespoons Salted Butter
  • 1 8-ounce pkg. Cream Cheese, softened
  • 2 1/2 cups Powdered Sugar
  • 1 teaspoon Vanilla Bean Paste or Extract
  • Fresh Fruits (Strawberries, Kiwis, Raspberries, Blueberries, Mangos, Peaches, etc.)


Instructions

  1. Make the Sugar Cookie Dough: In a mixing bowl, cream together butter and sugar until light and fluffy, about 3-4 minutes. Beat in the egg, egg yolk, and vanilla until combined. Add flour, baking powder, and salt. Stir just until the dough comes together. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  2. Bake the Sugar Cookies: Preheat your oven to 350°F. Roll the cookies in 2-ounce portions. Place them on a parchment-lined baking sheet. Bake for 8-10 minutes, or until the edges are just turning golden and the centers slightly underbaked. Let cookies cool completely on a wire rack before frosting.
  3. Make the Cream Cheese Frosting: In a bowl, beat the softened butter and cream cheese until smooth, about 3 minutes. Add in the powdered sugar and vanilla, mixing well.
  4. Prep the Fruit: Wash and dry all fresh fruit thoroughly so it doesn’t add extra moisture to your cookies.
  5. Assemble: Spread a generous layer of cream cheese frosting over the cooled cookies. Arrange the sliced fruit in a fruit pizza style on the top.
  6. Store covered in the refrigerator.
