Description

Cowboy Cookies are a delightful mix of chocolate, coconut, and nuts, perfect for any occasion.


Ingredients

Scale
  • 1 cup Butter (barely softened)
  • 1 cup Brown Sugar
  • 1 cup Granulated Sugar
  • 2 large Eggs
  • 2 teaspoons Vanilla Extract
  • 2 1/4 cups All-Purpose Flour
  • 1 3/4 cups Rolled Oats
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Cornstarch
  • 1/2 teaspoon Salt
  • 1 1/2 cups Sweetened Flaked Coconut
  • 2 cups Semi-Sweet Chocolate Chips
  • 1 cup Pecans (roughly chopped)


Instructions

  1. Preheat the oven to 365°F (185°C).
  2. Cream together the butter, brown sugar, and granulated sugar for 3–4 minutes until light and fluffy.
  3. Add the eggs and vanilla extract and mix for 1 minute.
  4. Stir in the flour, oats, baking soda, cornstarch, and salt.
  5. Fold in the coconut, chocolate chips (reserve 1/4 cup for topping), and pecans.
  6. Drop dough balls onto a baking sheet.
  7. Bake for 9–11 minutes until the edges turn light golden.
  8. Press remaining chocolate chips on top and let cool for 5 minutes before transferring to a wire rack.

Notes

Store in an airtight container at room temperature for up to a week; freeze for up to three months.
