- 1 cup Butter (barely softened)
- 1 cup Brown Sugar
- 1 cup Granulated Sugar
- 2 large Eggs
- 2 teaspoons Vanilla Extract
- 2 1/4 cups All-Purpose Flour
- 1 3/4 cups Rolled Oats
- 1 teaspoon Baking Soda
- 1/2 teaspoon Cornstarch
- 1/2 teaspoon Salt
- 1 1/2 cups Sweetened Flaked Coconut
- 2 cups Semi-Sweet Chocolate Chips
- 1 cup Pecans (roughly chopped)
Instructions
- Preheat the oven to 365°F (185°C).
- Cream together the butter, brown sugar, and granulated sugar for 3–4 minutes until light and fluffy.
- Add the eggs and vanilla extract and mix for 1 minute.
- Stir in the flour, oats, baking soda, cornstarch, and salt.
- Fold in the coconut, chocolate chips (reserve 1/4 cup for topping), and pecans.
- Drop dough balls onto a baking sheet.
- Bake for 9–11 minutes until the edges turn light golden.
- Press remaining chocolate chips on top and let cool for 5 minutes before transferring to a wire rack.

Store in an airtight container at room temperature for up to a week; freeze for up to three months.
