Description

Delightful Chocolate Dipped Peanut Butter Cookies combining rich peanut butter flavor with sweet chocolate, perfect for any occasion.


Ingredients

  • 1 cup Butter
  • 1 cup Brown Sugar
  • 1 cup Granulated Sugar
  • 2 large Eggs
  • 2 teaspoons Vanilla Extract
  • 1 cup Chunky Peanut Butter
  • 2 1/2 cups All-Purpose Flour
  • 1/2 teaspoon Baking Soda
  • 3/4 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • Sugar (for rolling)
  • 10 ounces Ghirardelli Melting Wafers or Semi-Sweet Chocolate Chips or Chocolate Bar


Instructions

  1. In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar for 4 minutes or until the mixture is light and fluffy.
  2. Add the eggs, vanilla extract, and chunky peanut butter. Mix until well combined.
  3. Fold in the flour, baking soda, baking powder, and salt until no dry ingredients are visible.
  4. Cover the dough and chill in the refrigerator for at least 30 minutes to 1 hour.
  5. Preheat the oven to 350°F and line a cookie sheet with parchment paper.
  6. Roll the chilled dough into 2-inch balls, then roll in sugar to coat.
  7. Place the coated cookie balls on the prepared cookie sheet. Bake for 9-11 minutes until edges are light golden; do not overbake.
  8. Let cookies rest for at least 5 minutes before transferring to a cooling rack.
  9. Melt the chocolate according to package instructions. Once cooled, dip half of each cookie into melted chocolate and let firm up on a rack.
