- 1 cup Butter
- 1 cup Brown Sugar
- 1 cup Granulated Sugar
- 2 large Eggs
- 2 teaspoons Vanilla Extract
- 1 cup Chunky Peanut Butter
- 2 1/2 cups All-Purpose Flour
- 1/2 teaspoon Baking Soda
- 3/4 teaspoon Baking Powder
- 1/4 teaspoon Salt
- Sugar (for rolling)
- 10 ounces Ghirardelli Melting Wafers or Semi-Sweet Chocolate Chips or Chocolate Bar
Instructions
- In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar for 4 minutes or until the mixture is light and fluffy.
- Add the eggs, vanilla extract, and chunky peanut butter. Mix until well combined.
- Fold in the flour, baking soda, baking powder, and salt until no dry ingredients are visible.
- Cover the dough and chill in the refrigerator for at least 30 minutes to 1 hour.
- Preheat the oven to 350°F and line a cookie sheet with parchment paper.
- Roll the chilled dough into 2-inch balls, then roll in sugar to coat.
- Place the coated cookie balls on the prepared cookie sheet. Bake for 9-11 minutes until edges are light golden; do not overbake.
- Let cookies rest for at least 5 minutes before transferring to a cooling rack.
- Melt the chocolate according to package instructions. Once cooled, dip half of each cookie into melted chocolate and let firm up on a rack.
Notes
These cookies are best enjoyed fresh from the oven or at room temperature. Store in an airtight container for up to a week.
