- 1 cup Butter, softened
- 3/4 cup Brown Sugar
- 3/4 cup Granulated Sugar
- 2 large Eggs
- 2 teaspoons Vanilla Extract
- 2 1/2 cups Flour
- 1 teaspoon Baking Soda
- 1/2 teaspoon Cream of Tartar
- 1/2 teaspoon Salt
- 2 teaspoons Chai Spice Blend
- 1 Tablespoon Cinnamon (for Chai Spice Blend)
- 1 1/4 teaspoon Cardamom (for Chai Spice Blend)
- 1 teaspoon Ginger (for Chai Spice Blend)
- 1/4 to 1/2 teaspoon Ground Cloves (for Chai Spice Blend)
- 1/4 teaspoon Nutmeg (for Chai Spice Blend)
- Pinch Black Pepper (for Chai Spice Blend)
- 1/3 cup Granulated Sugar (for rolling)
- 1 Tablespoon Chai Spice Blend (for rolling)
Instructions
- Cream together softened butter, brown sugar, and granulated sugar for about 4 minutes until light and fluffy.
- Add eggs and vanilla extract, mixing for an additional minute until combined.
- Prepare chai spice blend by combining cinnamon, cardamom, ginger, ground cloves, nutmeg, and black pepper.
- Gradually stir in flour, cream of tartar, baking soda, salt, and 2 teaspoons of the chai spice blend until just combined.
- Mix remaining chai spice blend with 1/3 cup of granulated sugar for rolling.
- Chill cookie dough in the refrigerator for 25-30 minutes.
- Preheat oven to 350°F (175°C).
- Roll chilled dough into small balls, coat with chai sugar mixture.
- Press down in the middle for flatter cookies if desired, and place on a parchment-lined baking sheet.
- Bake for 9-11 minutes until lightly golden around the edges.
- Let cool on baking sheet for a few minutes before transferring to a wire rack.
Notes
Store cookies in an airtight container at room temperature for 5-7 days. Unbaked cookie balls can be frozen and baked from frozen.
