Ingredients

  • 1 cup Butter, softened
  • 3/4 cup Brown Sugar
  • 3/4 cup Granulated Sugar
  • 2 large Eggs
  • 2 teaspoons Vanilla Extract
  • 2 1/2 cups Flour
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Cream of Tartar
  • 1/2 teaspoon Salt
  • 2 teaspoons Chai Spice Blend
  • 1 Tablespoon Cinnamon (for Chai Spice Blend)
  • 1 1/4 teaspoon Cardamom (for Chai Spice Blend)
  • 1 teaspoon Ginger (for Chai Spice Blend)
  • 1/4 to 1/2 teaspoon Ground Cloves (for Chai Spice Blend)
  • 1/4 teaspoon Nutmeg (for Chai Spice Blend)
  • Pinch Black Pepper (for Chai Spice Blend)
  • 1/3 cup Granulated Sugar (for rolling)
  • 1 Tablespoon Chai Spice Blend (for rolling)


Instructions

  1. Cream together softened butter, brown sugar, and granulated sugar for about 4 minutes until light and fluffy.
  2. Add eggs and vanilla extract, mixing for an additional minute until combined.
  3. Prepare chai spice blend by combining cinnamon, cardamom, ginger, ground cloves, nutmeg, and black pepper.
  4. Gradually stir in flour, cream of tartar, baking soda, salt, and 2 teaspoons of the chai spice blend until just combined.
  5. Mix remaining chai spice blend with 1/3 cup of granulated sugar for rolling.
  6. Chill cookie dough in the refrigerator for 25-30 minutes.
  7. Preheat oven to 350°F (175°C).
  8. Roll chilled dough into small balls, coat with chai sugar mixture.
  9. Press down in the middle for flatter cookies if desired, and place on a parchment-lined baking sheet.
  10. Bake for 9-11 minutes until lightly golden around the edges.
  11. Let cool on baking sheet for a few minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container at room temperature for 5-7 days. Unbaked cookie balls can be frozen and baked from frozen.
