- 1 1/4 cups Brown Sugar
- 1/2 cup Granulated Sugar
- 2 large Eggs
- 2 teaspoons Vanilla Extract
- 2 3/4 cups All-Purpose Flour
- 1 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 11-ounce package Butterscotch Chips
- Sea Salt Flakes (optional, for topping)
Instructions
- Preheat your oven to 385°F (195°C). Line your baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar for about 4 minutes until light and fluffy.
- Add the eggs and vanilla extract to the butter mixture and mix for 1 minute, scraping the sides of the bowl halfway through.
- Fold in the flour, baking soda, and salt, mixing gently until just combined.
- Carefully fold in the butterscotch chips, reserving 1/4 cup to add on top after baking.
- Drop dough onto prepared baking sheets, leaving space between each cookie.
- Bake for about 8-10 minutes or until the edges are lightly golden brown.
- Immediately place the reserved butterscotch chips on top of each warm cookie and sprinkle sea salt if desired.
- Let the cookies set for 3-4 minutes, then transfer them to a cooling rack.
Notes
