Description

Deliciously chewy brown sugar cookies with a rich, sweet flavor, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, melted and cooled
  • 1 3/4 cup brown sugar, tightly packed
  • 1 large egg
  • 1 egg yolk
  • 1 1/2 teaspoon vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 tablespoon cornstarch
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 3/4 teaspoon salt
  • Granulated sugar for rolling


Instructions

  1. Combine melted butter and brown sugar in a large bowl until well combined.
  2. Add the egg, egg yolk, and vanilla extract, and stir well.
  3. In a separate bowl, whisk together flour, cornstarch, baking soda, baking powder, and salt.
  4. Gradually mix dry ingredients into the wet ingredients until combined.
  5. Cover the bowl and refrigerate for at least 45 minutes.
  6. Preheat oven to 350°F (175°C) and line a cookie sheet with parchment paper.
  7. Roll dough into 2 tablespoon-sized balls and coat in granulated sugar.
  8. Place on prepared cookie sheet, spacing at least 2 inches apart.
  9. Bake for 8-11 minutes and allow to cool on the sheet before transferring.

Notes

For best results, chill the dough and watch the cookies closely while baking.
