- 1 cup unsalted butter, melted and cooled
- 1 3/4 cup brown sugar, tightly packed
- 1 large egg
- 1 egg yolk
- 1 1/2 teaspoon vanilla extract
- 2 3/4 cups all-purpose flour
- 1 tablespoon cornstarch
- 3/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 3/4 teaspoon salt
- Granulated sugar for rolling
Instructions
- Combine melted butter and brown sugar in a large bowl until well combined.
- Add the egg, egg yolk, and vanilla extract, and stir well.
- In a separate bowl, whisk together flour, cornstarch, baking soda, baking powder, and salt.
- Gradually mix dry ingredients into the wet ingredients until combined.
- Cover the bowl and refrigerate for at least 45 minutes.
- Preheat oven to 350°F (175°C) and line a cookie sheet with parchment paper.
- Roll dough into 2 tablespoon-sized balls and coat in granulated sugar.
- Place on prepared cookie sheet, spacing at least 2 inches apart.
- Bake for 8-11 minutes and allow to cool on the sheet before transferring.
Notes
For best results, chill the dough and watch the cookies closely while baking.
