- 1 cup Unsalted Butter, softened
- 1 1/2 cups Granulated Sugar
- 1 large Egg
- 1 large Egg Yolk
- 2 teaspoons Vanilla Extract
- 2 1/2 cups All-Purpose Flour
- 1 teaspoon Baking Powder
- 1/2 teaspoon Baking Soda
- 3/4 teaspoon Salt
- Sparkling or Sanding Sugar (for topping)
Instructions
- In a large mixing bowl, cream together the softened butter and granulated sugar for about 4 minutes until light and fluffy, scraping down the sides of the bowl.
- Add the egg, egg yolk, and vanilla extract, mixing for 1 more minute until well combined.
- Gently fold in the all-purpose flour, baking powder, baking soda, and salt, being careful not to overmix.
- Wrap the dough tightly in plastic wrap and refrigerate for at least 1 hour.
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Roll the chilled dough into balls and place them on the prepared baking sheet.
- Bake for 9-12 minutes, until the edges are lightly golden but the centers are still soft. Sprinkle with sparkling or sanding sugar immediately after removal from the oven.
- Let cool on the baking sheet before enjoying.
Notes
Store cookies in an airtight container for up to a week. Refrigerate if you wish to keep them fresh longer. Reheat in the microwave for a few seconds as needed.
