- 1/2 cup sugar
- 1 large egg yolk
- 1 to 1 1/2 teaspoons almond extract
- 1 teaspoon vanilla extract
- 1 1/4 cups almond flour (blanched)

- 1 cup granulated sugar
- 3/4 cup brown sugar

- 1 large egg yolk
- 1 teaspoon almond extract
- 3 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 to 3/4 cup sliced almonds
- Powdered sugar (for dusting)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together 3 tablespoons of softened salted butter and 1/2 cup of sugar until smooth, about 2-3 minutes.
- Add in 1 egg yolk, 1 to 1 1/2 teaspoons almond extract, and 1 teaspoon vanilla extract; mix until combined.
- Gently fold in 1 1/4 cups of almond flour until fully incorporated.
- In another bowl, beat together 1 cup of softened butter, 1 cup of granulated sugar, and 3/4 cup of brown sugar until creamy.
- Add 1 egg, another egg yolk, and 1 teaspoon almond extract; mix well until smooth.
- Combine 3 cups of flour with 1/2 teaspoon of baking soda and 1/2 teaspoon of salt; gradually add this mixture to the wet ingredients, stirring until no dry flour remains.
- Flatten a spoonful of dough in your hand, place a small amount of almond filling in the center, fold the dough over, and shape it into a ball.
- Roll the ball in the sliced almonds to coat the outside.
- Place the cookies on the prepared baking sheet, leaving space between each.
- Bake for 12-15 minutes until lightly golden. Let cool slightly before transferring to a wire rack.
- Once cooled, dust with powdered sugar.
Notes
